Description

A simple and healthy crockpot meal with tender chicken and root vegetables in a tangy balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups baby carrots
  • 2 cups chopped sweet potatoes
  • 1 large onion, sliced
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add carrots, sweet potatoes, and onions around the chicken.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, honey, thyme, salt, pepper, and garlic powder.
  4. Pour the mixture over the chicken and vegetables.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Serve warm.

Notes

  • You can substitute sweet potatoes with regular potatoes.
