Description
A healthy and flavorful sandwich filling made with lentils and beans cooked in a crockpot with BBQ sauce.
Ingredients
- 1 cup dried lentils
- 1 cup canned beans (any variety)
- 1 cup BBQ sauce
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse lentils and drain beans.
- Add lentils, beans, onion, garlic, BBQ sauce, vegetable broth, smoked paprika, and cumin to the crockpot.
- Stir well to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Season with salt and pepper before serving.
- Use as a sandwich filling or topping.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Adjust BBQ sauce quantity for desired sweetness.
- For a spicier version, add chili flakes.
