Description

A healthy and flavorful sandwich filling made with lentils and beans cooked in a crockpot with BBQ sauce.


Ingredients

  • 1 cup dried lentils
  • 1 cup canned beans (any variety)
  • 1 cup BBQ sauce
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste


Instructions

  1. Rinse lentils and drain beans.
  2. Add lentils, beans, onion, garlic, BBQ sauce, vegetable broth, smoked paprika, and cumin to the crockpot.
  3. Stir well to combine.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Season with salt and pepper before serving.
  6. Use as a sandwich filling or topping.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Adjust BBQ sauce quantity for desired sweetness.
  • For a spicier version, add chili flakes.
