Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 4 cups low-sodium beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Place beef, carrots, potatoes, onion, celery, and garlic in the crockpot.
  2. Add beef broth and season with thyme, rosemary, bay leaf, salt, and pepper.
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. Remove bay leaf before serving.
  5. Serve hot and enjoy.

Notes

  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the stew during the last 30 minutes of cooking.
