Description
A hearty and healthy crockpot beef stew packed with vegetables and tender beef. Perfect for a comforting meal with minimal effort.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 4 cups low-sodium beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef, carrots, potatoes, onion, celery, and garlic in the crockpot.
- Add beef broth and season with thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaf before serving.
- Serve hot and enjoy.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the stew during the last 30 minutes of cooking.
- You can add other vegetables like peas or green beans if desired.
