Ingredients

  • 1.5 lbs beef tips, trimmed
  • 2 cups low-sodium beef broth
  • 1 cup sliced mushrooms
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 8 oz whole wheat egg noodles
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef tips for 2-3 minutes per side.
  2. Transfer beef tips to the crockpot. Add broth, mushrooms, onion, garlic, thyme, and black pepper.
  3. Cover and cook on low for 6-7 hours.
  4. Cook noodles according to package directions. Drain and set aside.
  5. Serve beef tips over noodles.
