Description
A hearty and healthy meal with tender beef tips and noodles cooked in a crockpot.
Ingredients
- 1.5 lbs beef tips, trimmed
- 2 cups low-sodium beef broth
- 1 cup sliced mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp black pepper
- 8 oz whole wheat egg noodles
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Brown the beef tips for 2-3 minutes per side.
- Transfer beef tips to the crockpot. Add broth, mushrooms, onion, garlic, thyme, and black pepper.
- Cover and cook on low for 6-7 hours.
- Cook noodles according to package directions. Drain and set aside.
- Serve beef tips over noodles.
