Description
A warm and comforting soup made with carrots and ginger, perfect for a healthy meal.
Ingredients
- 6 large carrots, peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup coconut milk
Instructions
- Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
- Add garlic and ginger, cook for 1 minute.
- Transfer the mixture to a crockpot.
- Add carrots, vegetable broth, salt, and pepper.
- Cook on low for 6 hours or high for 3 hours.
- Blend the soup until smooth.
- Stir in coconut milk before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Garnish with fresh herbs if desired.
