Description

Ingredients

  • 6 large carrots, peeled and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk


Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
  2. Add garlic and ginger, cook for 1 minute.
  3. Transfer the mixture to a crockpot.
  4. Add carrots, vegetable broth, salt, and pepper.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Blend the soup until smooth.
  7. Stir in coconut milk before serving.
