Description

A healthier twist on classic mac and cheese, made with cauliflower and chicken in a crockpot for an easy, comforting meal.


Ingredients

  • 1 head cauliflower, chopped into florets
  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup Greek yogurt
  • 1 tsp mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Place cauliflower florets in the crockpot.
  2. Add shredded chicken on top.
  3. In a bowl, mix milk, Greek yogurt, mustard, garlic powder, onion powder, salt, and pepper.
  4. Pour the mixture over the cauliflower and chicken.
  5. Sprinkle shredded cheddar cheese on top.
  6. Cover and cook on low for 4 hours or until cauliflower is tender.
  7. Stir well before serving.
