Description
A healthier twist on classic mac and cheese, made with cauliflower and chicken in a crockpot for an easy, comforting meal.
Ingredients
- 1 head cauliflower, chopped into florets
- 2 cups cooked chicken, shredded
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup Greek yogurt
- 1 tsp mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Place cauliflower florets in the crockpot.
- Add shredded chicken on top.
- In a bowl, mix milk, Greek yogurt, mustard, garlic powder, onion powder, salt, and pepper.
- Pour the mixture over the cauliflower and chicken.
- Sprinkle shredded cheddar cheese on top.
- Cover and cook on low for 4 hours or until cauliflower is tender.
- Stir well before serving.
Notes
- Use fresh cauliflower for best texture.
- Adjust cheese amount to taste.
- Store leftovers in an airtight container for up to 3 days.
