Description
A healthy twist on classic mac and cheese, made with cauliflower and chicken in a crockpot.
Ingredients
- 2 cups cauliflower florets
- 1 cup cooked chicken, shredded
- 1 cup whole wheat pasta
- 1 cup low-fat cheddar cheese, shredded
- 1 cup milk
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop cauliflower into small florets.
- Cook pasta according to package instructions, then drain.
- Add cauliflower, chicken, pasta, cheese, milk, olive oil, and spices to the crockpot.
- Stir well to combine.
- Cook on low for 3 hours.
- Stir before serving.
Notes
- Use fresh cauliflower for best texture.
- Adjust spices to taste.
- Store leftovers in an airtight container for up to 3 days.
