A healthier twist on classic mac and cheese, this crockpot version uses cauliflower and chicken for a nutritious meal.


Ingredients

  • 2 cups cauliflower florets
  • 1 cup cooked chicken, shredded
  • 1 cup whole wheat elbow pasta
  • 1 cup low-fat cheddar cheese, shredded
  • 1 cup skim milk
  • 1/2 cup Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Add cauliflower, chicken, and pasta to the crockpot.
  2. In a bowl, mix milk, Greek yogurt, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the ingredients in the crockpot.
