Description
A healthy and creamy cauliflower soup made in a crockpot, perfect for low-carb and keto diets.
Ingredients
- 1 large head cauliflower, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp butter
Instructions
- Add cauliflower, vegetable broth, garlic, onion, salt, pepper, and paprika to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream, cheddar cheese, and butter.
- Cook for another 15 minutes until cheese melts.
- Serve warm.

- Store leftovers in an airtight container for up to 3 days.
- Add cooked bacon bits for extra flavor.
- Use almond milk instead of heavy cream for a dairy-free option.
