Description
A creamy and nutritious celery root soup made easily in your crockpot. Perfect for cold days and packed with vitamins.
Ingredients
- 1 large celery root (about 2 lbs), peeled and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tsp thyme
Instructions
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Transfer the onion and garlic to the crockpot.
- Add celery root, vegetable broth, salt, pepper, and thyme.
- Cover and cook on low for 6 hours or high for 3 hours.
- Blend the soup until smooth using an immersion blender.
- Stir in coconut milk and adjust seasoning if needed.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Garnish with fresh herbs or a drizzle of olive oil.
- You can substitute coconut milk with heavy cream if preferred.
