Ingredients
- 1.5 lbs lean ground beef
- 4 medium potatoes, sliced thin
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 cup low-fat cheddar cheese, shredded
- 1 cup low-fat mozzarella cheese, shredded
- 1 cup beef broth (low sodium)
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp paprika
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Layer half the potatoes, onions, and peppers in the crockpot.
- Add the cooked beef on top.
- Layer the remaining potatoes, onions, and peppers.
- Pour beef broth over the layers.
- Sprinkle garlic powder, black pepper, and paprika.
- Cover and cook on low for 6 hours.
- Top with shredded cheese and cook for an additional 15 minutes.
- Serve hot.
