Ingredients

  • 1.5 lbs lean ground beef
  • 4 medium potatoes, sliced thin
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 cup low-fat cheddar cheese, shredded
  • 1 cup low-fat mozzarella cheese, shredded
  • 1 cup beef broth (low sodium)
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika


Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Layer half the potatoes, onions, and peppers in the crockpot.
  3. Add the cooked beef on top.
  4. Layer the remaining potatoes, onions, and peppers.
  5. Pour beef broth over the layers.
  6. Sprinkle garlic powder, black pepper, and paprika.
  7. Cover and cook on low for 6 hours.
  8. Top with shredded cheese and cook for an additional 15 minutes.
  9. Serve hot.
