Description

Ingredients

  • 1 lb lean ground turkey or chicken
  • 1 cup uncooked brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups low-sodium chicken broth
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup plain Greek yogurt or light sour cream (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Brown the ground turkey or chicken in a skillet over medium heat until fully cooked. Drain excess fat.
  2. Add the cooked meat to the crockpot.
  3. Pour in the uncooked rice, black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Stir well to combine.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the rice is tender.
  5. Stir in the shredded cheese until melted.
  6. Serve with a dollop of Greek yogurt or sour cream and fresh cilantro if desired.

Notes

  • For a spicier version, add chopped jalapeños or extra chili powder.
