Description
A creamy and healthy version of chicken Alfredo tortellini made in the crockpot for an easy, delicious meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 package (20 oz) cheese tortellini
- 1 jar (15 oz) light Alfredo sauce
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup low-sodium chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Place chicken breasts in the crockpot.
- Add Alfredo sauce, chicken broth, garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 4 hours.
- Shred the chicken with two forks.
- Add tortellini, spinach, and mushrooms. Stir well.
- Cover and cook on high for 30 minutes or until tortellini is tender.
- Top with Parmesan cheese before serving.
Notes
- Use fresh tortellini for best results.
- Add extra veggies like bell peppers or zucchini if desired.
- Store leftovers in an airtight container for up to 3 days.
