Description

A creamy and healthy version of chicken Alfredo tortellini made in the crockpot for an easy, delicious meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 package (20 oz) cheese tortellini
  • 1 jar (15 oz) light Alfredo sauce
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add Alfredo sauce, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Cover and cook on low for 4 hours.
  4. Shred the chicken with two forks.
  5. Add tortellini, spinach, and mushrooms. Stir well.
  6. Cover and cook on high for 30 minutes or until tortellini is tender.
  7. Top with Parmesan cheese before serving.
