Description

A simple and healthy crockpot chicken and noodles recipe that’s easy to prepare and packed with flavor.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 8 oz whole wheat egg noodles
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for 3-4 minutes per side until lightly browned.
  2. Transfer chicken to the crockpot. Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, and black pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken and shred it with two forks. Return shredded chicken to the crockpot.
  5. Add egg noodles and cook on high for 15-20 minutes until noodles are tender.
  6. Serve hot.

Notes

  • Use whole wheat noodles for extra fiber.
  • Add more vegetables if desired.
  • Store leftovers in an airtight container for up to 3 days.
