Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup dried lentils, rinsed
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) diced tomatoes
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tbsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Place chicken, lentils, black beans, tomatoes, onion, bell pepper, and garlic in the crockpot.
- Pour in chicken broth and add cumin, chili powder, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken and shred it, then return to the pot.
- Stir in lime juice and adjust seasoning if needed.
- Serve hot, garnished with fresh cilantro.

- Use low-sodium broth to control salt content.
