Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup dried lentils, rinsed
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 lime, juiced
  • Fresh cilantro for garnish


Instructions

  1. Place chicken, lentils, black beans, tomatoes, onion, bell pepper, and garlic in the crockpot.
  2. Pour in chicken broth and add cumin, chili powder, paprika, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove chicken and shred it, then return to the pot.
  5. Stir in lime juice and adjust seasoning if needed.
  6. Serve hot, garnished with fresh cilantro.
