Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 bell peppers (any color), sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add sliced bell peppers, onion, and minced garlic.
- Pour in diced tomatoes and chicken broth.
- Season with chili powder, cumin, paprika, salt, and black pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it with two forks, then return to the crockpot.
- Stir in lime juice before serving.
- Garnish with fresh cilantro.
Notes
- You can use frozen chicken breasts, but cooking time may increase slightly.
- For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
- Serve with avocado, tortilla strips, or a dollop of Greek yogurt.
