Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 8 small whole wheat tortillas (optional)


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add sliced peppers, onion, and minced garlic on top.
  3. Drizzle olive oil and lime juice over the chicken and vegetables.
  4. Sprinkle chili powder, cumin, paprika, salt, and black pepper evenly.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred the chicken with two forks.
  7. Serve warm with whole wheat tortillas if desired.
