An easy and healthy crockpot chicken fajitas recipe that’s low in calories but full of flavor.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- 8 small whole wheat tortillas (optional)
Instructions
- Place chicken breasts in the crockpot.
- Add sliced peppers, onion, and minced garlic on top.
- Drizzle olive oil and lime juice over the chicken and vegetables.
- Sprinkle chili powder, cumin, paprika, salt, and black pepper evenly.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Serve warm with whole wheat tortillas if desired.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, top with fresh cilantro or avocado.
- Use corn tortillas for a gluten-free option.
