Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup chicken broth
  • Juice of 1 lime
  • Fresh cilantro for garnish


Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add sliced bell peppers and onions on top.
  3. In a small bowl, mix garlic, taco seasoning, cumin, chili powder, smoked paprika, black pepper, and salt.
  4. Sprinkle the seasoning mix over the chicken and vegetables.
  5. Pour chicken broth and lime juice over everything.
  6. Cover and cook on low for 6 hours or high for 3 hours.
  7. Shred the chicken using two forks.
  8. Serve on warm tortillas with fresh cilantro.
