A simple and healthy crockpot chicken fajitas recipe that requires no searing. Just dump the ingredients and let the slow cooker do the work for tender and flavorful fajitas.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 cup chicken broth
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add sliced bell peppers and onions on top.
- In a small bowl, mix garlic, taco seasoning, cumin, chili powder, smoked paprika, black pepper, and salt.
- Sprinkle the seasoning mix over the chicken and vegetables.
- Pour chicken broth and lime juice over everything.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken using two forks.
- Serve on warm tortillas with fresh cilantro.

- Use high-quality taco seasoning for better flavor.
- Adjust spices to your preference.
- For extra heat, add sliced jalapeños.
