Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime, juiced
  • 8 small whole wheat tortillas


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add sliced bell peppers, onion, and minced garlic.
  3. In a small bowl, mix olive oil, chili powder, cumin, paprika, salt, and black pepper.
  4. Pour the spice mixture over the chicken and vegetables.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred the chicken with two forks.
  7. Stir in lime juice.
  8. Serve on whole wheat tortillas.
