Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime, juiced
- 8 small whole wheat tortillas
Instructions
- Place chicken breasts in the crockpot.
- Add sliced bell peppers, onion, and minced garlic.
- In a small bowl, mix olive oil, chili powder, cumin, paprika, salt, and black pepper.
- Pour the spice mixture over the chicken and vegetables.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Stir in lime juice.
- Serve on whole wheat tortillas.
Notes
- For extra flavor, add fresh cilantro before serving.
- Store leftovers in an airtight container for up to 3 days.
