Description
A hearty and healthy chicken gnocchi soup made in the crockpot for easy preparation.
Ingredients
- 1 lb boneless skinless chicken breasts
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 1 package (16 oz) potato gnocchi
- 1 cup fresh spinach
- 1/2 cup heavy cream (optional)
Instructions
- Place chicken, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper in the crockpot.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it with two forks.
- Return shredded chicken to the crockpot.
- Add gnocchi and spinach.
- Cover and cook on high for 20 minutes.
- Stir in heavy cream if using.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze without cream for best results.
- Substitute gnocchi with cauliflower for a lower-carb option.
