Description

A hearty and healthy chicken gnocchi soup made in the crockpot for easy preparation.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 package (16 oz) potato gnocchi
  • 1 cup fresh spinach
  • 1/2 cup heavy cream (optional)


Instructions

  1. Place chicken, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper in the crockpot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Remove chicken and shred it with two forks.
  4. Return shredded chicken to the crockpot.
  5. Add gnocchi and spinach.
  6. Cover and cook on high for 20 minutes.
  7. Stir in heavy cream if using.
  8. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze without cream for best results.
