Description

A hearty and healthy twist on classic chicken parmesan, made in a crockpot for easy preparation. Packed with lean protein and fresh ingredients.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 (24 oz) jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/2 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup whole wheat pasta (optional)


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add marinara sauce, chicken broth, onions, bell peppers, garlic, oregano, basil, and black pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken, shred it, and return to the pot.
  5. If using pasta, add it and cook for an additional 20-30 minutes.
  6. Stir in parmesan and mozzarella cheese before serving.

Notes

  • Use fresh herbs for extra flavor.
  • Top with extra cheese if desired.
  • Store leftovers in an airtight container for up to 3 days.
