Description
A hearty and healthy twist on classic chicken parmesan, made in a crockpot for easy preparation. Packed with lean protein and fresh ingredients.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 (24 oz) jar marinara sauce
- 4 cups low-sodium chicken broth
- 1 cup diced onions
- 1 cup diced bell peppers
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 cup shredded parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup whole wheat pasta (optional)
Instructions
- Place chicken breasts in the crockpot.
- Add marinara sauce, chicken broth, onions, bell peppers, garlic, oregano, basil, and black pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return to the pot.
- If using pasta, add it and cook for an additional 20-30 minutes.
- Stir in parmesan and mozzarella cheese before serving.
Notes
- Use fresh herbs for extra flavor.
- Top with extra cheese if desired.
- Store leftovers in an airtight container for up to 3 days.
