Description
A hearty and healthy chicken parmesan stew made in the crockpot for an easy, flavorful meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup diced tomatoes
- 1 cup tomato sauce
- 1 cup low-sodium chicken broth
- 1 cup diced zucchini
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/4 cup grated parmesan cheese
- 1/4 cup shredded mozzarella cheese
Instructions
- Place chicken breasts in the crockpot.
- Add diced tomatoes, tomato sauce, chicken broth, zucchini, bell peppers, onions, garlic, oregano, basil, and black pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Stir in parmesan cheese and top with mozzarella cheese.
- Cover for 5 minutes until cheese melts.
- Serve hot.
Notes
- Use fresh herbs for more flavor.
- Add spinach for extra greens.
- Serve with whole-grain bread or pasta.
