Description

A hearty and healthy chicken parmesan stew made in the crockpot for an easy, flavorful meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1 cup tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 cup diced zucchini
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 1/4 cup shredded mozzarella cheese


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, tomato sauce, chicken broth, zucchini, bell peppers, onions, garlic, oregano, basil, and black pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred the chicken with two forks.
  5. Stir in parmesan cheese and top with mozzarella cheese.
  6. Cover for 5 minutes until cheese melts.
  7. Serve hot.
