Description
A simple and healthy chicken pho made in a crockpot. This dish is packed with flavors and requires minimal effort.
Ingredients
- 4 cups chicken broth
- 2 boneless, skinless chicken breasts
- 1 onion, sliced
- 3 garlic cloves, minced
- 1-inch ginger, sliced
- 1 cinnamon stick
- 2 star anise pods
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 4 oz rice noodles
- 1 cup bean sprouts
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh basil, chopped
- 1 lime, cut into wedges
- 1 jalapeño, sliced (optional)
Instructions
- Add chicken broth, chicken breasts, onion, garlic, ginger, cinnamon stick, star anise, fish sauce, and soy sauce to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Remove the chicken and shred it with forks.
- Strain the broth and discard solids.
- Return the shredded chicken to the broth.
- Cook rice noodles separately according to package instructions.
- Divide noodles into bowls, ladle hot broth and chicken over them.
- Top with bean sprouts, cilantro, basil, lime wedges, and jalapeño if desired.
Notes
- Use low-sodium broth if you prefer less salt.
- Adjust spice levels by adding more or fewer jalapeños.
- Store leftovers in an airtight container for up to 3 days.
