Description

A simple and nutritious slow cooker meal combining tender chicken with fluffy rice and vegetables for a complete protein-packed dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup brown rice
  • 2 cups low-sodium chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika


Instructions

  1. Place chicken breasts at the bottom of your crockpot
  2. Add brown rice, carrots, and celery on top of the chicken
  3. Pour chicken broth over all ingredients
  4. Sprinkle garlic powder, onion powder, black pepper, and paprika evenly
  5. Cover and cook on low for 6 hours
  6. Remove chicken, shred with two forks, and return to crockpot
  7. Stir everything together and serve hot

Notes

  • Do not lift the lid during cooking to maintain temperature
  • For creamier texture, stir in 1/4 cup Greek yogurt before serving
