Description

A healthy version of chicken tikka masala made in a crockpot. This dish is flavorful, easy to prepare, and packed with protein.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into chunks
  • 1 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup low-fat coconut milk
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. In a bowl, mix yogurt, lemon juice, garlic, and ginger. Add chicken pieces and coat well. Marinate for 30 minutes.
  2. Heat olive oil in a pan over medium heat. Add onions and cook until soft.
  3. Add diced tomatoes, garam masala, cumin, paprika, turmeric, salt, and cayenne pepper. Stir well.
  4. Transfer the mixture to the crockpot. Add marinated chicken and stir.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Stir in coconut milk before serving. Garnish with fresh cilantro.

Notes

  • For extra flavor, marinate chicken overnight.
  • Adjust cayenne pepper to your preferred spice level.
  • Serve with brown rice or cauliflower rice for a healthier option.
