Description
A healthy and flavorful chicken tinga made in the crockpot, perfect for tacos.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 can (14 oz) diced tomatoes
- 1 chipotle pepper in adobo sauce
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water
Instructions
- Place chicken breasts in the crockpot.
- Add diced tomatoes, chipotle pepper, onion, garlic, oregano, cumin, salt, and black pepper.
- Pour in water.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken using two forks.
- Mix well and serve in tacos with your favorite toppings.
Notes
- For extra heat, add more chipotle peppers.
- Serve with fresh cilantro, avocado, and lime wedges.
- Use corn tortillas for a gluten-free option.
