Description

A healthy and flavorful chicken tinga made in the crockpot, perfect for tacos.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (14 oz) diced tomatoes
  • 1 chipotle pepper in adobo sauce
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, chipotle pepper, onion, garlic, oregano, cumin, salt, and black pepper.
  3. Pour in water.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken using two forks.
  6. Mix well and serve in tacos with your favorite toppings.
