Description

A hearty and healthy stew made with chicken, wild rice, and vegetables, cooked slowly in a crockpot for maximum flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup wild rice
  • 3 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1/2 tsp salt


Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add wild rice, carrots, celery, onion, and garlic.
  3. Pour chicken broth over the ingredients.
  4. Sprinkle thyme, rosemary, pepper, and salt.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred chicken with forks before serving.
