Description
A healthy and creamy chicken chili made in a crockpot with cream cheese for added richness.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet (1 oz) taco seasoning
- 1 block (8 oz) cream cheese, softened
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, diced tomatoes, taco seasoning, cumin, garlic powder, and onion powder.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks.
- Add cream cheese and stir until melted and well combined.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- You can use frozen chicken breasts if fresh aren’t available.
- For extra heat, add diced jalapeños.
- Top with shredded cheese, avocado, or cilantro before serving.
