Description
A hearty and healthy crockpot chicken chili with cream cheese for a creamy texture. Easy to prepare and packed with flavor.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilis
- 1 (8 oz) block cream cheese, softened
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, diced tomatoes, and chicken broth.
- Sprinkle taco seasoning, cumin, garlic powder, onion powder, salt, and pepper over the top.
- Stir to combine slightly.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Shred chicken with a fork.
- Add cream cheese and stir until melted and fully incorporated.
- Serve hot with toppings of your choice.
Notes
- Use light cream cheese for a lower-fat option.
- Top with shredded cheese, avocado, or sour cream if desired.
- Store leftovers in the refrigerator for up to 3 days.
