Ingredients
- 1 lb lean ground beef
- 4 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup milk
- 1/2 cup plain Greek yogurt
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the beef, potatoes, onion, garlic, and chicken broth to the crockpot.
- Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
- Stir in milk, Greek yogurt, thyme, and parsley. Cook for another 15 minutes.
- Season with salt and pepper. Serve hot.
