Description
A healthy and creamy crockpot dish featuring tender beef and tortellini with a ranch flavor.
Ingredients
- 1 lb lean ground beef
- 1 (20 oz) package cheese tortellini
- 1 (1 oz) packet ranch seasoning
- 1 (10.5 oz) can cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 cup low-fat milk
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach (optional)
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the beef to the crockpot.
- In a bowl, mix ranch seasoning, cream of chicken soup, chicken broth, milk, garlic powder, onion powder, and black pepper.
- Pour the mixture over the beef in the crockpot and stir.
- Cover and cook on low for 4 hours or high for 2 hours.
- Add tortellini and spinach (if using) to the crockpot. Stir gently.
- Cover and cook on low for an additional 30 minutes or until tortellini is tender.
- Sprinkle with Parmesan cheese before serving.
Notes
- Use whole wheat tortellini for a healthier option.
- Substitute ground turkey for beef if preferred.
- Store leftovers in an airtight container for up to 3 days.
