A simple and healthy slow cooker meal with creamy ranch flavors, tender beef, and cheese-filled tortellini.
Ingredients
- 1 lb lean ground beef
- 1 packet ranch seasoning mix
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 package (20 oz) refrigerated cheese tortellini
- 1/2 cup light cream cheese, softened
- 1 cup fresh spinach, chopped
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to a slow cooker.
- Add ranch seasoning, cream of chicken soup, chicken broth, garlic powder, and black pepper. Stir well.
- Cover and cook on low for 4-5 hours.
- Stir in the tortellini, cream cheese, and spinach. Cook for an additional 15-20 minutes until tortellini is tender.
- Serve warm.

- Use whole wheat tortellini for extra fiber.
- Substitute ground turkey for a leaner option.
- Add extra veggies like diced bell peppers or mushrooms.
