Description
A simple and healthy crockpot curry chicken recipe that’s easy to prepare and packed with flavor.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan and sauté onion, garlic, and ginger until soft.
- Add curry powder and cook for 1 minute.
- Place chicken breasts in the crockpot.
- Pour sautéed mixture, coconut milk, and chicken broth over the chicken.
- Add bell pepper, salt, and black pepper.
- Cook on low for 6 hours or high for 3 hours.
- Shred chicken before serving.
Notes
- Adjust curry powder to taste.
- Serve with rice or naan.
- Store leftovers in the fridge for up to 3 days.
