Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a pan and sauté onion, garlic, and ginger until soft.
  2. Add curry powder and cook for 1 minute.
  3. Place chicken breasts in the crockpot.
  4. Pour sautéed mixture, coconut milk, and chicken broth over the chicken.
  5. Add bell pepper, salt, and black pepper.
  6. Cook on low for 6 hours or high for 3 hours.
  7. Shred chicken before serving.
