Description

A healthy twist on a classic taco salad using Doritos and slow-cooked ingredients for a flavorful meal.


Ingredients

  • 1 lb lean ground turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Greek yogurt
  • 1/4 cup salsa
  • 1 cup crushed Doritos
  • 1 lime, juiced


Instructions

  1. Brown the ground turkey in a skillet.
  2. Add taco seasoning and follow packet instructions.
  3. Transfer turkey to a crockpot with black beans and corn. Cook on low for 2 hours.
  4. Chop lettuce, tomatoes, and avocado.
  5. Mix Greek yogurt and salsa for dressing.
