A healthy twist on a classic taco salad using Doritos and slow-cooked ingredients for a flavorful meal.
Ingredients
- 1 lb lean ground turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup Greek yogurt
- 1/4 cup salsa
- 1 cup crushed Doritos
- 1 lime, juiced
Instructions
- Brown the ground turkey in a skillet.
- Add taco seasoning and follow packet instructions.
- Transfer turkey to a crockpot with black beans and corn. Cook on low for 2 hours.
- Chop lettuce, tomatoes, and avocado.
- Mix Greek yogurt and salsa for dressing.
- Layer lettuce, turkey mixture, tomatoes, avocado, and cheese in bowls.
- Top with Doritos and drizzle with dressing.
- Squeeze lime juice over each serving.
