Description
A simple and healthy beef stroganoff made in a crockpot. Perfect for busy days.
Ingredients
- 1 lb lean beef stew meat
- 1 cup low-sodium beef broth
- 1 cup sliced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup plain Greek yogurt
- 1 tbsp cornstarch
- Salt and pepper to taste
Instructions
- Place beef, broth, mushrooms, onion, garlic, Worcestershire sauce, and mustard in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Mix cornstarch with 1 tbsp water and stir into the crockpot.
- Cook for 15 more minutes until thickened.
- Stir in Greek yogurt just before serving.
Notes
- Use full-fat yogurt for creamier texture.
- Serve over whole wheat noodles or cauliflower rice.
