Description
A healthy twist on classic meatloaf with caramelized onions and melted Swiss cheese, cooked in a crockpot for convenience.
Ingredients
- 1.5 lbs lean ground beef (90% lean or higher)
- 1 large onion, thinly sliced
- 1 cup whole wheat breadcrumbs
- 1/2 cup low-fat milk
- 1 egg
- 2 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices reduced-fat Swiss cheese
Instructions
- In a large bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, thyme, salt, and pepper.
- Shape the mixture into a loaf and place in the crockpot.
- Top with thinly sliced onions.
- Cover and cook on low for 6 hours or high for 3 hours.
- In the last 15 minutes, place Swiss cheese slices on top.
- Let rest for 10 minutes before slicing.
Notes
- Use a slow cooker liner for easy cleanup.
- For crispier onions, broil for 2 minutes after cooking.
- Leftovers keep well in the fridge for 3 days.
