Description

A healthy twist on classic meatloaf with caramelized onions and melted Swiss cheese, cooked in a crockpot for convenience.


Ingredients

  • 1.5 lbs lean ground beef (90% lean or higher)
  • 1 large onion, thinly sliced
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup low-fat milk
  • 1 egg
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices reduced-fat Swiss cheese


Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, thyme, salt, and pepper.
  2. Shape the mixture into a loaf and place in the crockpot.
  3. Top with thinly sliced onions.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. In the last 15 minutes, place Swiss cheese slices on top.
  6. Let rest for 10 minutes before slicing.
