Description

A healthier version of the classic green bean casserole, made in a crockpot for easy preparation.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 1 cup low-sodium chicken broth
  • 1 cup sliced mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup plain Greek yogurt
  • 1 tbsp cornstarch
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup whole wheat breadcrumbs


Instructions

  1. Place green beans, chicken broth, mushrooms, onion, and garlic in the crockpot.
  2. Cover and cook on low for 4 hours.
  3. In a small bowl, mix Greek yogurt, cornstarch, black pepper, and salt.
  4. Stir the yogurt mixture into the crockpot.
  5. Sprinkle Parmesan cheese and breadcrumbs on top.
  6. Cover and cook for another 30 minutes.

Notes

  • You can use frozen green beans if fresh ones are unavailable.
  • For a creamier texture, add an extra 1/4 cup of Greek yogurt.
  • Store leftovers in an airtight container for up to 3 days.
