Description
A healthier version of the classic green bean casserole, made in a crockpot for easy preparation.
Ingredients
- 1 lb fresh green beans, trimmed
- 1 cup low-sodium chicken broth
- 1 cup sliced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup plain Greek yogurt
- 1 tbsp cornstarch
- 1 tsp black pepper
- 1/2 tsp salt
- 1/4 cup grated Parmesan cheese
- 1/4 cup whole wheat breadcrumbs
Instructions
- Place green beans, chicken broth, mushrooms, onion, and garlic in the crockpot.
- Cover and cook on low for 4 hours.
- In a small bowl, mix Greek yogurt, cornstarch, black pepper, and salt.
- Stir the yogurt mixture into the crockpot.
- Sprinkle Parmesan cheese and breadcrumbs on top.
- Cover and cook for another 30 minutes.
Notes
- You can use frozen green beans if fresh ones are unavailable.
- For a creamier texture, add an extra 1/4 cup of Greek yogurt.
- Store leftovers in an airtight container for up to 3 days.
