Description
A hearty and healthy soup made with lean ground beef, vegetables, and savory broth, cooked slowly in a crockpot for maximum flavor.
Ingredients
- 1 lb lean ground beef
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the beef, onion, carrots, celery, garlic, broth, tomatoes, thyme, and oregano to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, add 1 tbsp tomato paste.
- Freeze leftovers for up to 3 months.
