Description
A hearty and healthy stew made with tender chicken, cabbage, and aromatic herbs, cooked slowly in a crockpot for maximum flavor.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 4 cups chopped green cabbage
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a skillet over medium heat. Brown the chicken thighs for 3-4 minutes per side.
- Place cabbage, onion, garlic, carrots, and celery in the crockpot.
- Add browned chicken on top of the vegetables.
- Pour chicken broth over the ingredients.
- Add thyme, rosemary, oregano, black pepper, and bay leaf.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove bay leaf before serving.
Notes
- You can use chicken breasts instead of thighs for a leaner option.
- Add more vegetables like zucchini or bell peppers if desired.
- Store leftovers in an airtight container for up to 3 days.
