Description
A simple, healthy crockpot meal with tender chicken and fresh vegetables in a honey mustard sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 2 tbsp whole grain mustard
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 cups baby potatoes, halved
- 2 cups carrots, sliced
- 1 cup green beans, trimmed
Instructions
- Place chicken breasts at the bottom of the crockpot.
- In a bowl, mix honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, onion powder, salt, and pepper.
- Pour the sauce over the chicken.
- Add potatoes, carrots, and green beans around the chicken.
- Cover and cook on low for 6 hours or high for 4 hours.
- Serve warm.
Notes
- Use skinless thighs for extra tenderness.
- Add more vegetables like bell peppers or zucchini if desired.
- Adjust honey for sweetness preference.
