Description
A healthy crockpot version of John Wayne Casserole with layers of ground beef, vegetables, and cheese, cooked slowly for rich flavor.
Ingredients
- 1 lb ground beef (90% lean)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (4 oz) diced green chiles
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 package (8 oz) crescent rolls
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chili powder
Instructions
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add onion, bell pepper, garlic, salt, black pepper, and chili powder. Cook until vegetables soften.
- Stir in diced tomatoes and green chiles. Remove from heat.
- Unroll crescent rolls and press into the bottom of a greased crockpot.
- Layer beef mixture over the crescent rolls.
- Mix sour cream and mayonnaise, then spread over the beef.
- Sprinkle both cheeses evenly on top.
- Cover and cook on low for 4 hours or until cheese melts and casserole sets.
- Let stand for 10 minutes before serving.
Notes
- For a spicier version, add jalapeños or red pepper flakes.
- Substitute Greek yogurt for sour cream for a lighter option.
- Store leftovers in an airtight container for up to 3 days.
