Description

A healthy crockpot version of John Wayne Casserole with layers of ground beef, vegetables, and cheese, cooked slowly for rich flavor.


Ingredients

  • 1 lb ground beef (90% lean)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (4 oz) diced green chiles
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 package (8 oz) crescent rolls
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili powder


Instructions

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, bell pepper, garlic, salt, black pepper, and chili powder. Cook until vegetables soften.
  3. Stir in diced tomatoes and green chiles. Remove from heat.
  4. Unroll crescent rolls and press into the bottom of a greased crockpot.
  5. Layer beef mixture over the crescent rolls.
  6. Mix sour cream and mayonnaise, then spread over the beef.
  7. Sprinkle both cheeses evenly on top.
  8. Cover and cook on low for 4 hours or until cheese melts and casserole sets.
  9. Let stand for 10 minutes before serving.
