Description
A hearty and healthy lasagna soup made in the crockpot for easy preparation and rich flavors.
Ingredients
- 1 lb lean ground turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup part-skim ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Brown the ground turkey, onion, and garlic in a skillet.
- Transfer the mixture to the crockpot.
- Add crushed tomatoes, chicken broth, basil, oregano, salt, and pepper.
- Cook on low for 6 hours or high for 3 hours.
- Add broken lasagna noodles and cook for another 30 minutes.
- Stir in ricotta, Parmesan, and spinach before serving.
Notes
- Use whole wheat lasagna noodles for extra fiber.
- Substitute ground turkey with lean ground beef if preferred.
- Freeze leftovers for quick meals later.
