Description

A hearty and healthy lasagna soup made in the crockpot for easy preparation and rich flavors.


Ingredients

  • 1 lb lean ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup part-skim ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach


Instructions

  1. Brown the ground turkey, onion, and garlic in a skillet.
  2. Transfer the mixture to the crockpot.
  3. Add crushed tomatoes, chicken broth, basil, oregano, salt, and pepper.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Add broken lasagna noodles and cook for another 30 minutes.
  6. Stir in ricotta, Parmesan, and spinach before serving.

Notes

  • Use whole wheat lasagna noodles for extra fiber.
  • Substitute ground turkey with lean ground beef if preferred.
