Description
A light and flavorful soup made with tender chicken, orzo, and fresh lemon. Perfect for a healthy meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups water
- 1 lemon (juiced and zested)
- 1 medium onion (diced)
- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 2 cloves garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for 3-4 minutes per side until lightly browned.
- Transfer chicken to a crockpot. Add onion, carrots, celery, garlic, thyme, oregano, salt, and pepper.
- Pour in chicken broth and water. Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred with two forks. Return to the crockpot.
- Add orzo and lemon juice. Cover and cook for another 15-20 minutes until orzo is tender.
- Stir in lemon zest before serving.
Notes
- For a thicker soup, reduce the water to 1 cup.
- You can substitute orzo with rice or quinoa if needed.
- Store leftovers in the fridge for up to 3 days.
