A hearty and healthy lentil bolognese made in a crockpot. This dish is packed with protein and flavor, perfect for a comforting meal.
Ingredients
- 1 cup dried lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons tomato paste
Instructions
- Rinse the lentils under cold water and drain.
- Add all ingredients to the crockpot and stir to combine.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Stir occasionally to prevent sticking.
- Serve hot over pasta or with crusty bread.

- Use green or brown lentils for best results.
- Add spinach or kale for extra greens.
