Description
A hearty and nutritious lentil stew made in a crockpot, perfect for a healthy meal.
Ingredients
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- Add all ingredients to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Stir occasionally.
- Serve hot.
