Description
A creamy and hearty cauliflower chowder made in the crockpot. Packed with vegetables and flavor, it’s a healthy twist on traditional chowder.
Ingredients
- 1 head cauliflower, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Add cauliflower, carrots, celery, onion, garlic, and vegetable broth to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Use an immersion blender to partially blend the soup.
- Stir in milk, cheese, thyme, salt, and pepper.
- Cook for an additional 30 minutes until cheese melts.
- Serve hot.
Notes
- For a thicker chowder, blend more of the soup.
- Substitute almond milk for a dairy-free option.
- Add cooked bacon or ham for extra protein.
