Description

Ingredients

  • 1 head cauliflower, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Add cauliflower, carrots, celery, onion, garlic, and vegetable broth to the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Use an immersion blender to partially blend the soup.
  4. Stir in milk, cheese, thyme, salt, and pepper.
  5. Cook for an additional 30 minutes until cheese melts.
