Ingredients
- 4 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken or vegetable broth
- 1 cup low-fat milk
- 1/2 cup plain Greek yogurt
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 cup shredded cheddar cheese (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Place potatoes, onion, garlic, and broth in the crockpot.
- Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
- Use a potato masher to slightly mash the potatoes for a thicker texture.
- Stir in milk, Greek yogurt, salt, pepper, and thyme.
- Cook for an additional 15 minutes.
- Serve hot, topped with shredded cheese and green onions if desired.
Notes
- For a creamier soup, blend half of it before adding milk and yogurt.
- Use vegetable broth for a vegetarian version.
- Store leftovers in the fridge for up to 3 days.
