Description
A flavorful and healthy chicken dish with a sweet and spicy mango habanero sauce, cooked slowly in a crockpot for tender results.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup diced mango
- 1 habanero pepper, seeded and minced
- 1/2 cup chicken broth
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp honey
- 1 tbsp chopped fresh cilantro
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix mango, habanero, chicken broth, lime juice, garlic, cumin, salt, pepper, and honey.
- Pour mixture over chicken.
- Cook on low for 6 hours or high for 3 hours.
- Shred chicken with forks and stir in cilantro before serving.
Notes
- Adjust habanero amount for preferred spice level.
- Serve with rice or cauliflower rice.
- Store leftovers in an airtight container for up to 3 days.
