Description

A flavorful and healthy chicken dish with a sweet and spicy mango habanero sauce, cooked slowly in a crockpot for tender results.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup diced mango
  • 1 habanero pepper, seeded and minced
  • 1/2 cup chicken broth
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp honey
  • 1 tbsp chopped fresh cilantro


Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix mango, habanero, chicken broth, lime juice, garlic, cumin, salt, pepper, and honey.
  3. Pour mixture over chicken.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Shred chicken with forks and stir in cilantro before serving.
