Description
A warm and nutritious breakfast made in the crockpot with pumpkin, maple syrup, and pecans.
Ingredients
- 1 cup steel-cut oats
- 2 cups water
- 1 cup milk (dairy or plant-based)
- 1/2 cup pumpkin puree
- 2 tbsp maple syrup
- 1/4 cup chopped pecans
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Combine oats, water, milk, pumpkin puree, maple syrup, cinnamon, vanilla, and salt in the crockpot.
- Stir well to mix all ingredients.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Stir in chopped pecans before serving.
- Serve warm with extra maple syrup if desired.
Notes
- Use gluten-free oats if needed.
- Adjust sweetness by adding more or less maple syrup.
- Store leftovers in the fridge for up to 3 days.
