Description

A warm and nutritious breakfast made in the crockpot with pumpkin, maple syrup, and pecans.


Ingredients

  • 1 cup steel-cut oats
  • 2 cups water
  • 1 cup milk (dairy or plant-based)
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1/4 cup chopped pecans
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Combine oats, water, milk, pumpkin puree, maple syrup, cinnamon, vanilla, and salt in the crockpot.
  2. Stir well to mix all ingredients.
  3. Cook on low for 6-7 hours or high for 3-4 hours.
  4. Stir in chopped pecans before serving.
  5. Serve warm with extra maple syrup if desired.

Notes

  • Use gluten-free oats if needed.
  • Adjust sweetness by adding more or less maple syrup.
  • Store leftovers in the fridge for up to 3 days.
