Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1/2 cup low-sodium chicken broth
- 1/2 cup light cream or half-and-half
- 1/4 cup grated Parmesan cheese
- 1/3 cup chopped sun-dried tomatoes
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- 1 tbsp olive oil
- Fresh basil for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Sear chicken for 2 minutes per side until lightly browned.
- Transfer chicken to the crockpot.
- In a bowl, mix chicken broth, cream, Parmesan, sun-dried tomatoes, garlic, oregano, basil, red pepper flakes, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Shred or slice the chicken before serving. Garnish with fresh basil.
Notes
- For a dairy-free version, use coconut cream instead of regular cream.
- Serve over whole wheat pasta, quinoa, or with steamed vegetables.
- Store leftovers in an airtight container for up to 3 days.
