Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup light cream or half-and-half
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup chopped sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Fresh basil for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Sear chicken for 2 minutes per side until lightly browned.
  2. Transfer chicken to the crockpot.
  3. In a bowl, mix chicken broth, cream, Parmesan, sun-dried tomatoes, garlic, oregano, basil, red pepper flakes, salt, and pepper.
